We like to eat!
But we try to only eat what we grow, in fact, as much as 40% of the wholesome food consumed on campus is grown right here by our students.
We grow: lettuce, cabbage, carrots, beets, corn, string beans, onions, garlic, tomatoes, Lamb’s Quarter, squash, potatoes, claytonia, rhubarb, asparagus, and assorted herbs including comfrey, mint, echinacea, yarrow, plantain, calendula.
We are a regenerative campus.
We are very conscientious about inputs and only use compost, manures, and organic matter to condition our soil.
Intense soil science, Permaculture, Biodynamics, and water conservation are all part of our goals to “heal the earth” and promote good nutrition as we do our part as caretakers of the earth.
We are developing our own honey beehives and the grains and dry beans that we use are either produced on campus or we purchase them from local farmers less than 30 miles from our campus. Of course, we also supplement our daily fresh produce with our own farm fresh eggs, goat milk, homemade bread, and meat from chickens, rabbits, and hogs.
Kombucha, ginger beer (non-alcoholic of course), and kefir are also produced on campus to promote optimal health.
